Here’s a delicious recipe for Makhana Aloo Sabji, a delightful dish that combines the crunchiness of makhana (fox nuts) with the comforting taste of potatoes.

Ingredients

  • 1 cup makhana (fox nuts)
  • 2 medium-sized potatoes, peeled and diced
  • 2 tablespoons oil or ghee
  • 1 teaspoon cumin seeds
  • 1 pinch of Maatr’s Aroma Bomb hing
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder (adjust to taste)
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons chopped fresh coriander leaves
  • 1 tablespoon lemon juice (optional)

Instructions

Roast the Makhana:

  • Heat a pan on medium flame and dry roast the makhana until they turn crispy and slightly golden. This should take about 4-5 minutes. Once roasted, set them aside.

Prepare the Tempering:

  • In the same pan, add oil or ghee. Once hot, add cumin seeds, mustard seeds and a pinch of Maatr’s Aroma Bomb hing. Let them splutter.

Add Potatoes:

  • Add the diced potatoes to the pan. Stir well to coat the potatoes with the oil and spices. Cook for 5-6 minutes until they start to soften.

Add Spices:

  • Add turmeric powder, red chili powder, coriander powder, and salt. Mix well so that the spices coat the potatoes evenly.

Cook the Potatoes:

  • Cover the pan with a lid and let the potatoes cook on a low flame for about 10-12 minutes, stirring occasionally, until they are fully cooked and tender.

Combine with Makhana:

  • Add the roasted makhana to the pan and mix well. Cook for another 2-3 minutes so that the makhana absorbs the flavors of the spices and potatoes.

Finish the Dish:

  • Sprinkle garam masala and chopped coriander leaves over the dish. Give it a good mix.
  • Optionally, add a tablespoon of lemon juice for a tangy twist.

Serve hot with roti, paratha, or as a side dish with rice.
